Apple & Honey Chicken

Ingredients

10 chicken legs
1 C apple cider
1/2 C white wine
1/2 C honey
1/2 t sea salt
1/4 t course black pepper
1/2 t chili flakes
1 T coriander ( finely chopped )
zest from 1 lemon
juice from 1 lemon
1/2 t crushed garlic
1 cinnamon stick

Sauce:
1/2 t chili flakes
3 pinches of salt
6 apples ( peeled and cubed )

Instructions

Toss all of the ingredients for the chicken into a cooking bag, Shake and massage all the ingredients together, tie and set in the refrigerator for an hour or so.

Before baking, dump all the bag's contents into a baking dish and remove the cinnamon stick.

Bake at 275 C ( about 520 F ), turning the chicken over when it's nicely browned ( as above ). Remove from oven and remove the chicken legs. Place the baking dish with the juices onto the stove top and add the sauce ingredients.  Simmer for 10 to 15 minutes to reduce the sauce, stirring once in a while. 

Pour the sauce over the chicken and serve.

NOTES;

GREAT for Rosh Ha Shannah ( The Jewish New Year ) where eating apples and honey are customary.
