Blackberry Mousse

Ingredients

2 C frozen blackberries
1/2 C sugar
1/4 C water
4 t gelatin
2 t orange liquor
2 t lemon juice
4 C whipped cream

Instructions

Mix the berries, sugar, water, gelatin, liquor, and lemon juice together in a sauce pan. Let stand for 5 minutes. 

Bring the mixture to a simmer and stir occasionally until sugar and gelatin are dissolved. Turn the heat off and let cool. When room temperature, whisk the mixture and then fold in 4 cups of whipped cream.

Chill at least an hour before serving.
