Buttermilk Spice Cake

Ingredients

3/4 C butter ( softened )
1/2 C white sugar
1/2 C brown sugar
3 eggs ( room temp )
1 t vanilla extract
1 t cinnamon
1/2 t nutmeg
1 1/4 C buttermilk ( room temp )
2 1/2 C all purpose flour
2 1/2 t baking powder

Instructions

Cream the butter and sugars together until smooth with a mixer. Add one egg at a time and beat until smooth. Add vanilla, sifting in the cinnamon, nutmeg, and one cup of the flour also. Mix until incorporated, then add the buttermilk and mix that in, ending with the rest of the flour and baking powder sifted and mixed in.

Grease cake pan or line it with parchment paper ( I use silicon cake pans and line only the bottom for very easy removal ). Fill the cake pan ( #28 ) and slice through your batter with a spatula to ensure there are no bubbles. 

Bake at 150 C ( 300 F ) for about 50 minutes or until tooth pick comes out clean. The cake's middle will feel firm to the touch.

Frost with vanilla frosting when cooled and serve at room temperature.

NOTES;

Make sure all ingredients are room temperature before starting cake.

The cake can be baked in two separate cake pans or cut in half if you'd like a double layer. 

For a big birthday cake, make two cakes each according to the whole recipe and frost in between cakes after they've cooled..
