Instructions Pour the milk into a sauce pan, add butter and sugar. Stir while heating on stove top only enough to dissolved sugar and melt the butter. Pour hot milk mixture into a mixer bowl. Add cold water, vanilla, salt, egg yolks, and yeast. Whisk to mix. Sift into the liquids 4 cups of the flour and beat with your mixer using the paddle attachment until smooth. Change mixer attachment to hook. Sift in the rest of the flour and return bowl to mixer, mixing for about 4 more minutes. The dough should come away from the sides of the bowl and feel sticky to the touch, yet will not stick to your hands when patted. Cover the bowl and dough with plastic wrap and let rise for 1 1/2 hours. Melt the last 1/4 C butter in a little pan. This will be used to brush the dough after it's rolled out. Spray pie tins or baking dish with cooking spray. Remove dough on to a floured surface, knead for about 30 seconds, divide in half. Roll out half of the dough into a 2' x 1' rectangle. Here's where you use elbow grease. Keep rolling hard - you'll get there and it's sooo worth it! Brush dough generously with melted butter, sprinkle with sugar, then with about 2 teaspoons of cinnamon covering the whole surface of the dough. Sprinkle the surface with 1/2 C chopped pecans and roll into a 2' long jelly roll. Slice jelly roll into 1 inch slices, place in baking dishes just touching one another ( barely ) as to leave room for second rising. Let rise 1 hour before baking at 360 F ( 180 C ) in a *preheated* oven for 15 to 20 minutes depending on how dark you like your rolls. Roll out and repeat with second half of your dough. Bake as above. Brush with orange syrup ( recipe below ). Orange Syrup 1 C water Combine ingredients in a sauce pan. Stir while bringing to a boil. Boil for exactly ten minutes without stirring. Take off heat. Brush rolls with orange syrup after baking while still hot from the oven. Makes about 3 dozen ( 36 ). NOTES; OMG!!! |
