Jell-o Cake

Ingredients

3 eggs
1 1/4 C sugar
1/2 C oil
2 t lemon zest
2 T lemon juice
pinch of salt
2 1/2 t baking powder
2 1/4 C flour
1 1/8 C milk ( or water )

1 package favorite Jell-O
whipped cream

Instructions

Line cake pan with cooking bag ( split opened ). Prepare jello and pour into the cake pan. Chill until firm, remove the coking bag with the jello in it and store in refrigerator until cake is done.

Cake;

Mix eggs, sugar, oil, lemon zest and juice together in a bowl with an electric mixer for 3 minutes until frothy.

Sift in flour, salt, and baking powder while alternating with the milk.

Grease a cake pan with oil ( or use cooking spray ).

Bake at 160 C ( 320 F ) until the cake springs back and is light golden brown. Cool. Place the jello in its bag onto a flat plate. Remove the cake and turn upside down directly onto the jello ( be sure to center well! ). Place another plate over the cake. Now you have a sort of cake & plate sandwich. Invert and carefully peel off the cooking bag from the jello. Decorate with your whipped cream.

NOTES;

Can be served with fresh fruit, also. YUM-O it's JELL-O!
