Pumpkin Cake

Ingredients

3 eggs
1 1/2 C packed brown sugar

1/2 C oil

1/4 t salt
1 t vanilla extract
1/3 C milk or half&half
1 C pumpkin
2 1/4 C flour
2 t baking powder
1 t cinnamon
1/4 t nutmeg   

1/2 C chopped walnuts for toping

Instructions

Beat the eggs, brown sugar and oil with a mixer for about 3 minutes. Add salt, vanilla, milk, pumpkin and spices then mix for another 3 minutes. Sift in the flour and baking powder and mix til there are no lumps.

Pour into a greased baking pan ( or non-greased silicon cake pan ), top with chopped walnuts. Bake at 320 F ( 160 C ) for 40 - 45 minutes or until the middle is firm to the touch. Serve warm or at room temperature with whipped cream or vanilla ice cream.
