Instructions Beat the eggs, brown sugar and oil with a mixer for about 3 minutes. Add salt, vanilla, milk, pumpkin and spices then mix for another 3 minutes. Sift in the flour and baking powder and mix til there are no lumps. Pour into a greased baking pan ( or non-greased silicon cake pan ), top with chopped walnuts. Bake at 320 F ( 160 C ) for 40 - 45 minutes or until the middle is firm to the touch. Serve warm or at room temperature with whipped cream or vanilla ice cream. |
