( Traditional Moroccan Tea Cookies )

Ingredients

1 kilo ( 7 cups ) all purpose flour
2 C butter ( softened )
2 C sugar
1 C raw sesame
1 C shredded coconut
2 t baking powder
2 t vanilla extract
5 eggs

Instructions

Cream butter and sugar together. Add sesame and coconut, vanilla, then one egg at a time beating well with a mixer. Sift in flour and baking powder. Mix until a ball of dough forms. Use hands if necessary.

Run the dough through a mincer with cookie attachments ( see photo on right ). The cookie attachment is the long metal "stick" like kids use with playdough. Break off each raw cookie when it's about 10 cm. ( 4" ) long. 

Fill your ungreased cookie sheet and bake at 180 C ( 360 F ) for 20 minutes on a high rack in your oven until golden brown.

NOTES;

These are a very traditional every day Moroccan butter cookie, usually served with mint tea. Raife is plural. The singular for one cookie is "Raifa" ( RI-fa ).

This is perfect for younger helpers. It's always easier with two people. One feeding the mincer, and one breaking off the dough and filling cookie sheets while a batch is baking. My favorite mother/daughter project!
