Ramekin Cheesecakes |

Instructions Make sure all ingredients are at room temperature before starting. Preheat oven to 200 C ( 390 F ). Mix cream cheese, sour cream, sugar, and vanilla together in a bowl using only a spatula to blend the ingredients. Add eggs one at a time, but do not over stir. Spray 10 ramekins with cooking spray. Spoon the cheese mixture into the ramekins until 2/3 full. Place in a "bain marie" ( water bath ) that is 1" deep. Bake the ramekins in their water bath for 40 minutes at 200 C ( 390 F ). Let cool slightly before inverting onto plate. To invert, loosen the side of the cakes with a blunt knife, place a cake plate over the ramekin and in one motion, turn upside down. Serve warm or cold with fresh berries or wild berry sauce. NOTES; These are even better the day after you make them! |
