Rich Chocolate Cake

Ingredients

1 C butter ( room temp )
1 1/2 C sugar
1 t vanilla extract
3 eggs ( room temp )
1/2 C cocoa
2 1/2 C flour
2 t baking powder
2 C plain white yogurt

Frosting;

1 C heavy cream
2 t powdered sugar
1/4 C milk
2 T brandy ( or liquor of choice )
2 T flour

Instructions

In a bowl, mix the butter, sugar, eggs, and vanilla together with an electric mixer for 3 minutes. Sift in the dry ingredients and alternate mixing with the yogurt. Mix until there are no lumps.

Pour into a greased ( or parchment lined ) cake pan and bake at 160 C ( 320 F ) until done ( About 40-45 minutes. The middle of the cake will be firm to the touch ). Check with a tooth pick if you're not sure. The tooth pick should come out clean. Let the cake cool a while before frosting.

Frosting;

In a sauce pan heat the whipping cream, chocolate and sugar on low flame, stirring constantly until all of the chocolate is melted and there are no lumps.

In a cup, mix the flour into the milk and brandy. Mix well so there are no lumps. Pour ( strain if there are lumps ) into hot cream mixture and stir constantly for 3 minutes on low heat until thick. Take off heat and whisk every once in a while until the frosting cools to room temperature. Frost cake.

NOTES;

This cake is best served at room temperature! 

I usually make two cakes and frost in between them, also.
