Sable

( French Butter Cookies )

Ingredients

1 C butter ( room temp )
3 egg yolks ( room temp )
3 T sugar
2 C flour
2 t baking powder

Instructions

Mix all of the base ingredients into a bowl using a fork and breaking up the butter until the mixture is crumbly. Squeeze with fingers and hands until a ball starts to form ( the dough will seem dry ). Do this until one ball is formed. 

Knead on a counter top until smooth. Roll out the dough on a floured surface until 1/2 cm. thick ( 1/4 inch ). Cut circles with a ridged cookie cutter and place on an ungreased cookie sheet 1" apart. 

Bake at 160 C ( 320 F ) until light golden brown.
