Strawberry Angel Cake

Ingredients

6 eggs ( separated )
1 C sugar
1 t vanilla extract
1 C flour

Filling;
strawberries
sugar to taste
whipped cream

Instructions

Preheat oven to 160 C ( 320 F ). 

Separate eggs. Beat egg whites until stiff while slowly adding 1 cup of sugar. Add the vanilla to the egg yolks and beat until lemon colored ( about 1 minute ).

Pour into the egg white mixture, sift in the flour and fold in with a whisk ( preferably a spring whisk ).  Pour into an angel food cake pan and shake a little to level and get big bubbles out.

Bake at 160 C ( 320 F ) for about 1 hour. Turn down the heat to 150C  ( 300 F ) and continue baking until top of cake is wrinkled slightly. Remove from oven. Cool.

Filling;

Mash strawberries with sugar to taste. Stir well. Cut the cake in half and spoon strawberries onto the bottom half. Replace the top half and decorate with whipped cream.
