Whole Wheat & Wild Mushroom Pilaf

Ingredients

2 T olive oil
1 C raw whole wheat ( washed )
2 C chicken breast ( sliced )
2 C assorted wild mushrooms ( chopped/sliced )
1/2 C onion ( chopped )
2 T fresh sage ( minced )
1/2 C white wine
1 t sea salt
1/4 t course black pepper
4 C boiling water

Instructions

Wash the whole wheat grain by running cold water over it in a strainer.

Heat olive oil in a soup pot, add chicken, grain, and mushrooms. Saute until chicken is cooked through. Add onion, sage, wine, salt and pepper and stir the mixture. Add 4 cups of boiling water, turn to a low flame and cover. Let simmer on low until liquid are all absorbed ( about 20 - 25 minutes ). 

Stir with a fork to fluff. Serve hot or cold.

NOTES;

I like to serve this on blanched spinach leaves.

Shrimp, shell fish, lamb, and steak can all substitute for the chicken, which makes this recipe a winner!
