Whole Wheat & Wild Mushroom Pilaf |

Instructions Wash the whole wheat grain by running cold water over it in a strainer. Heat olive oil in a soup pot, add chicken, grain, and mushrooms. Saute until chicken is cooked through. Add onion, sage, wine, salt and pepper and stir the mixture. Add 4 cups of boiling water, turn to a low flame and cover. Let simmer on low until liquid are all absorbed ( about 20 - 25 minutes ). Stir with a fork to fluff. Serve hot or cold. NOTES; I like to serve this on blanched spinach leaves. Shrimp, shell fish, lamb, and steak can all substitute for the chicken, which makes this recipe a winner! |
